Not only does this plum-blueberry spritzer contain two of the very best in summer fruits, but it can also be easily reproofed with a sparkling wine.
Serving: 1 drink
Ingredients
5 cups of water
1 cup fresh ripe blueberries plus more for garnish
3 ripe plums pitted and cut into eighths
8 fresh or dried bay leaves
¼ cup plus 2 tablespoons of sugar
Club soda or sparkling water for serving
Instructions
Ginger Syrup
Bring the water to a boil in a medium saucepan.
Add the blueberries, plums, bay leaves, and sugar to a boil over high heat for about 20 minutes.
Strain the mixture through a mesh strainer or cheese cloth, pressing lightly to extract any juice, reserve the bay leaves.
Return the juice mixture to the pan, add the reserved bay leaves and simmer over medium heat until liquid has reduced to 2 cups roughly, about 10 minutes.
Discard bay leaves and strain liquid into a container.
Let syrup cool completely.
Drink
Over ice, add 2 ounces of syrup to 8 ounces of sparkling water and garnish with fresh blueberries
