Charity Harrison from Oracle Catering has been with Bon Appetit since 2016 and for the next two days she’s sharing her traditional flavors from The Republic of Ghana with this station take-over.
Main dishes:
- Fish pan fried red snapper with ground suya
- African Lamb Stew with eggplants and palm nut concentrate
- Spicy black eye peas pancake with sauté mixed vegetables
- Black eye peas with rice and wache leaves
- Sauté Taro leaves with palm oil seasoned with grains of selim
Sides:
- Fried plantain
- Spicy sauté green beans with coconut oil
- Spicy Akara (black eye peas) fritters
- Roasted fall squash with fresh ginger
